Happy February! Wow, it's been a year since we began the Rewind Monthly Newsletter. Time flies when you're having fun! Read more to check out events this month, fishing regulations, and a delicious recipe. 


Local Events


There are a couple of fun events this month including a Super Bowl Party (February 4th), a Mardi Gras celebration (February 10th), and a Chili Cook-Off (Feb 24th), all at the Destin Harbor! You can also celebrate Valentine's Day in a traditional way at restaurants all over Destin, or celebrate with the Rewind crew! Take your significant other fishing and we'll provide t-shirts.

There are also Farmers Markets in Fort Walton Beach and Miramar Beach on the weekends.


Fishing News


Mingo

We were ecstatic to learn we could catch Greater Amberjack and Gray Triggerfish in January. We enjoyed fun fishing and rewarding catches. However, the season has closed. 

It's not the end of the world though! We can still catch mingo, king mackerel, bonito, and much more. Call Captain Reid if you're itching to catch a specific fish and don't know about the regulations, (850) 797-7678. 


Recipe of the Month


Since Vermilion Snappers, also known as Mingos, are in season, we’ll showcase a Mingo recipe this month. This Lemon Butter recipe serves four people and only takes about fifteen minutes.


Ingredients:

3 pounds of Mingo filets

Flour

Salt and pepper

¼ Cup of vegetable oil

4 Tablespoons of butter

2 Tablespoons of lemon juice

2 Tablespoons of parsley


Directions: 

Roll the filets in the flour and seasoning mixture. Heat the oil in a skillet and brown both sides of the fish (about three minutes per side). Remove fish and use the skillet to combine the butter and lemon juice. Let it simmer for about one minute before pouring over the fish. Sprinkle with parsley and enjoy!
