Get ready for some Spring Break madness!

March is a busy month for the Rewind family. We are warming up from a long Winter's nap just in time for Spring Break and St. Patty’s Day.


Local News



Spring Break begins in late February and extends through April for schools all over the country. As always, our beautiful beaches will be filled with vacationing families and local bars are the places to be. Later in the month, we’ll be attending clover-filled events in Destin and the surrounding areas for Saint Patrick’s Day. On Saturday, March 15th enjoy the annual Grogg March in HarborWalk Village, a parade in 30A, craft beers served at McGuire’s Irish Pub, and green festivities at Baytowne. Also in March, locals can celebrate their favorite pups at the Destin Dog Park Pooch Palooza on Saturday, March 23rd.

Recipe of the month



Grilled Bacon Wrapped Amberjack


Ingredients

  • Amberjack filets 

  • Dales

  • Olive oil

  • Chopped garlic

  • White onion

  • Tony's

  • Black pepper

  • Brown sugar

  • Coca Cola

Instructions


  • 3/4 inch thick palm-size filets

  • 4-6 ounces of Marinade: 1/4 cup Dales, 1/3 cup olive oil, 2+ finely chopped garlic gloves, 1/4 cup finely chopped onion, 1 tablespoon Tony Cacherie Seasoning, and black pepper to taste 

  • Mix marinade in casserole or gallon ziploc, add fish, cover completely

  • Marinate 30 minutes in fridge

  • Remove filets from marinade, wrap each with a slice of uncooked bacon, and secure with toothpick or skewer

  • Grill about 5 minutes per side

  • Add a heaping teaspoon of brown sugar to each fillet, dribble with regular Coke

  • Once bubbly, remove from grill

Enjoy with a chilled Pinot Grigio and a tossed salad
